  1. If using whole coriander seeds, dry-roast lightly in a pan until fragrant, cool, grind finely in a mill to powder (Dhania).
  2. When making curry, toss in heavily (by the tbsp) alongside turmeric etc. when onions/tomatoes are fried and moisture evaporated.
  3. Stir-fry spices on low for mins to avoid burning, drawing refreshing aroma and naturally thickening curry gravy (sauce).
