  1. Shave or smash block/disc-shaped Jaggery with a knife or hammer to make fine (*powder types are also convenient).
  2. Dissolve 1-
  3. tsp as a 'secret ingredient' at the finishing stage of South Indian Sambar/Rasam or Gujarati curries, balancing acidity and heat.
  4. When making Indian sweets (Mithai) or Chai, add generously instead of white sugar to yield healthy, deep sweetness.
