Since Indian cooking often involves 'removing moisture to the limit to condense umami (cheese/strained yogurt)', this tear-resistant, optimally water-draining cloth is top kitchen infrastructure. Also, pro tech wraps whole spices in this cloth as 'Potli (spice pouch)' when cooking Biryani, making removal easy later.
