How to use

Instructions

  1. Slowly boil down milk, sugar, pistachios, saffron, cardamom in a pot to half volume, making rich liquid (Kulfi base).
  2. When cooled, pour liquid into these conical Kulfi Molds, close lids firmly.
  3. Stand upright in freezer (traditionally a giant pot with ice/salt) overnight to freeze rock-hard.
  4. Right before eating, briefly dip mold in water, pierce with bamboo skewer, pop it out.

[Hardcore] The word 'Kulfi' itself supposedly derives from the Persian word meaning 'covered cup' for this mold. Unlike Western ice cream made by incorporating air, Kulfi freezes boiled-down milk directly, boasting unbelievable density and richness 'sticky, chewy' with no ice crystals.

Eating tips & etiquette

[Unique Usage] Place the too-cold Kulfi removed from the mold on a plate, splash sweet rose syrup and ultra-thin noodles (Falooda Sev) messily over the top, eating while scraping the melting milk chunk with a spoon!
