Heat massive 'Black Sesame Oil' in clay pot, slowly sauté this Lao Jiang on low 'until edges curl and crisp (Gan Bian)', completely transferring intense heat/aroma to oil—the biggest point. Then braise with chicken (or duck) and rice wine.
