Ingredients
- Stainless steel(Large pot and square strainers)
Instructions
- [Usage Secret]
- [Secret Soup (Lao Lu)] Fill the pot to the brim with pitch-black braising liquid (sauce) made of soy, star anise, cassia, rock sugar, keeping it at a rolling boil. Some stalls use secret sauce replenished for years.
- [Customer Order (Jia Re Luwei)] Receive ingredients (Dougan, fish cakes, cabbage, instant ramen) chosen by customers in a basket.
- [Boil in Compartments] Cooking times differ, so toss ingredients separately into the 'square compartments (strainers)' in the pot, simmering (or reheating) briefly in the hot sauce for a few mins.
- Pull up the strainer to drain, cut bite-sized with a cleaver, top with scallions and spicy sauce, put in a plastic bag, and hand to the customer.

Trivia
[For Adults] Walking a Taiwan night market, if you smell an intense 'sweet aroma of star anise and soy', this square pot is definitely steaming. Very similar to Japan's 'Oden' system, but the Taiwanese way is not drinking the soup, just taking ingredients out and eating with spicy sauce. The magic night pot satisfying Taiwanese 'slight hunger'.
