How to use

Ingredients

  • Woven bamboo(traditional)
  • or Stainless steel(modern)

Instructions

  1. [Usage Secret]
  2. [Adding Noodles] Sink this strainer (Tebo) into a rolling boil in a large pot, add one portion of Chinese noodles (or rice noodles, Meifun).
  3. [Stirring] Stir inside the strainer with long chopsticks so noodles don't stick. Tossing veg like bean sprouts or chives into the strainer to boil together is the Taiwanese time-saving style.
  4. [Shake! (Draining)] When noodles are done, pull up the strainer, use wrist snap to shake strongly up and down, draining water thoroughly 'Splash! Shake shake!'.
  5. Flip the drained noodles and veg 'plop' into a bowl with lard and soy sauce, mix quickly, and serve.

Trivia

[Hardcore] 'Chi' is Taiwanese for the action of shaking noodles up and down to drain (etymology of Taiwanese 'Chizai Mian'). Bamboo-woven was mainstream historically, supposedly transferring delicious bamboo aroma to noodles, but stainless steel is mostly used now for hygiene/durability. Not just for noodles, highly active for making Tang Qingcai (boiled cabbage); a tool at the center of Taiwanese eateries' 'live performance'.
