- Prepare fresh milk from cows (or goats) grazed in the rich nature of the Black Sea coast eating plenty of fresh grass.
- Traditionally, put cream (or yogurt) separated from milk into a wooden or skin barrel called 'yayık'.
- Agitate the barrel vigorously for hours to separate the fat and form a butter block. Wash repeatedly in cold water to remove impurities, and knead with rock salt.
