  2. Heat plenty of Taiwan's fragrant 'Hei Ma You' (black sesame oil) in a clay pot (or wok).
  3. Add massive amounts of smashed, unpeeled 'Lao Jiang' (old ginger). Sauté slowly on low without burning to completely transfer ginger heat and extract into the oil.
  4. Toss in chopped bone-in chicken thighs, sauté on high until surfaces turn white.
  5. Use absolutely no water (or very little). Vigorously pour about half a bottle of Taiwanese 'rice wine'.
  6. Cover and simmer on medium for ~
  7. mins, cooking off the alcohol until chicken is soft. Season purely with salt (Ma You Ji soup is done).
  8. In a separate pot, briefly boil 'White Mianxian' (unsteamed, salted, dried ultra-thin noodles), drain, and plate.
  9. Pour the piping hot Ma You Ji soup and meat generously over the noodles.
