Instructions

  2. Slice the star ingredient, 'Ya Xue' (Duck blood jelly), thickly. Blanch it alongside beef honeycomb tripe and omasum with scallions and ginger to completely erase offal odor.
  3. Heat beef tallow in a wok, fry massive amounts of Pixian Doubanjiang, chilies, Sichuan pepper, garlic, ginger, and Chongqing Hot Pot base to create a hellishly red broth.
  4. Pour in stock, season with salt, soy, and wine.
  5. Briefly boil bean sprouts and wood ears, laying them at the bottom of a serving bowl. Boil the duck blood, tripe, spam, and quail eggs in the broth until cooked.
  6. Transfer everything to the bowl. Just like Shui Zhu, pile raw chili and Sichuan pepper on top, and violently splash smoking-hot oil over it to seal the aroma.
