  • Star anise
  • Pepper salt
  • Frying oil

Instructions

  3. hr with soy, star anise, scallions, ginger to soften and totally deodorize (Lu Da Chang).
  4. Wipe moisture from braised intestine, cut into bite-sized rings. String the green beans (Siji Dou).
  5. Heat high-temp oil in a wok, drop in intestines. Deep-fry until the surface is 'ultra-crunchy'.
  6. Drop in green beans, bare-fry for seconds until skins wrinkle.
  7. Return intestines and beans to the emptied wok.
  8. Add minced raw garlic, scallions, red chili, and heavily sprinkle special 'Jiao Yan Fen' (salt, white pepper, five-spice).
  9. Toss violently on high a few times to coat with spices to finish.
