Instructions
- Make a firm dough with flour, plenty of eggs, and salt, and roll into several thin circles. Prepare a pot of boiling water and a bowl of cold water. Boil each dough sheet briefly in hot water (the origin of the name 'water = su'), then immediately plunge into cold water to tighten, draining well. Layer these boiled sheets in a buttered baking dish, brushing with melted butter between layers. Add a thick layer of feta cheese and parsley in the middle, then top with more boiled sheets. Bake in an oven until the top is crispy and golden. The outside is crispy, the inside chewy like lasagna.
