- tbsp garlic-ginger paste,
- tsp cumin seeds,
- tsp coriander powder, 1/
- tsp turmeric,
- tsp Garam Masala,
- tsp chili powder,
- tbsp oil, salt, 300ml water, cilantro.
- Boil dried Soya Chunks in hot water ~
- mins rehydrating soft.
- Drain, washing in cold water while powerfully squeezing sponge-like Soya Chunks 'squeeeeze' with both hands. Completely removing soy's unique grassy smell and old moisture is the biggest secret to making it delicious.
- Heat oil in pan, pop cumin seeds, fry onions/garlic-ginger paste slowly until deep golden.
- Add tomato puree and all spices (coriander, turmeric, chili powder, salt), frying until oil separates becoming gooey paste (Masala base).
- Toss moisture-squeezed Soya Chunks here, frying for mins firmly entwining spice paste.
- Pour water, cover simmering on low
