  4. tomato pureed,
  5. tbsp garlic-ginger paste,
  6. tsp cumin seeds,
  7. tsp coriander powder, 1/
  8. tsp turmeric,
  9. tsp Garam Masala,
  10. tsp chili powder,
  11. tbsp oil, salt, 300ml water, cilantro.
  12. Boil dried Soya Chunks in hot water ~
  13. mins rehydrating soft.
  14. Drain, washing in cold water while powerfully squeezing sponge-like Soya Chunks 'squeeeeze' with both hands. Completely removing soy's unique grassy smell and old moisture is the biggest secret to making it delicious.
  15. Heat oil in pan, pop cumin seeds, fry onions/garlic-ginger paste slowly until deep golden.
  16. Add tomato puree and all spices (coriander, turmeric, chili powder, salt), frying until oil separates becoming gooey paste (Masala base).
