Description

The soul food of Nanchang, Jiangxi, and currently a massive trend among youth across China. A soupless dish of thick, round rice noodles (Bifun) boiled and violently tossed with peanuts, pickled mustard greens, pickled radish, lard, and dark soy until jet-black. The ultimate junk noodle.

  2. (Noodle Prep) Use Jiangxi-specific dried rice noodles, which are thick and round like spaghetti. Boil for 10-
  3. mins until soft, then shock in cold water to draw out an intense, bouncy chew (Q-彈). Drain thoroughly.
  4. (Toppings) Prepare a mountain of crispy fried peanuts, minced pickled radish (Luo Bo Gan), pickled mustard greens (Xue Cai), scallions, and cilantro.
  5. In the bottom of a bowl, combine premium 'Lard (Zhu You)', soy sauce, coloring dark soy (Lao Chou), sesame oil, salt, MSG, and homemade chili oil. (*Authentically contains no meat).
  6. Add the boiled noodles and dump all the pickles/peanuts on top.
  7. While warm, mix violently from the bottom up until the noodles are dyed pitch-black/brown by the dark soy and coated in the aroma of lard.
