  2. [Soul of the Broth] Sauté massive beef bones and tendons with scallions, ginger, and massive garlic until browned.
  3. Add doubanjiang, tianmianjiang, and a spice pouch (Lu Bao) of 'star anise, Sichuan pepper, cassia, cumin' to release aroma.
  4. Pour soy sauce, wine, tomatoes (acidity/umami), and massive water. Simmer slowly on low for half a day to a full day, completing a bright red (or dark brown) 'Hongshao broth' where beef umami is dissolved to the limit (remove the beef blocks from this).
  5. Boil thick white Chinese noodles (Jiachang Mian or sliced noodles). Blanch bok choy (greens) with them.
  6. Plate noodles and greens, pour the hot Hongshao beef broth to the brim.
  7. Top with chopped scallions and stir-fried mustard greens (Suan Cai) (absolutely no meat topping).
